Antonio Sotos S.L. saffron is from La Mancha region of Spain, Est. 1912 is in the third generation of a family business that has nearly 100 years experience dealing with saffron.
Manufacture & supervision of there products is carried out under strictest rules of quality & control, having obtained the international quality certifications in IFS (International Food Standard), BRC (British Retail Consortium) & ISO 9001:2000 for handling, packing & commercialisation of saffron.
Saffrons scientific name (crocus sativus) comes from kroke, a word of Greek origin meaning filament & sativus meaning cultivable. It is a bulbous & perennial plant which belongs to the Iridaceae family, the flower is characterised for having an intensive purple colour & the stamens are yellow & there are 3 red stigmas. These stigmas are joined at the base of the flower by the style & once removed, toasted & dried become what we know as saffron.Qualified by experts as the best saffron in the world, it is solely produced, manufactured & packed in La Mancha region in the following townships, Albacete, Toledo,Cuenca y Ciudad Real. Nowadays it's production is regulated & protected by the Origin Denomination "saffron from La Mancha" of which Antonio Sotos S.L. is a founder member.
More than 250,000 flowers are needed to obtain 1kg of saffron. The recommended amount for 4-6 servings is 0.15g. Saffron has endless gastronomic qualities, it has a particular strong & exotic aroma, as well as a slightly bitter taste, saffron is great at adding flavour, able to transmit deep aromas, but at the same time it is smooth & tender, being the only one irreplaceable spice in many of Spanish & International recipes.
