Cardamom is a member of the ginger family & can be recognised by their small seed pod, triangular in cross section & spindle-shaped, with a thin papery outer shell & small black seeds. Electra pods are light green while Anomum pods are larger & dark brown. Cardamom has strong, unique taste with an intensely aromatic, resinous fragrance. Black cardamom has a distinctly more smoky, though not bitter aroma with a coolness some consider similar to mint. It is a common ingredient in Indian cooking, & is often used in bakery in Nordic countries.
